Ingredients

  • 1/2 cup butter melted
  • 4 cups shredded rotisserie chicken
  • 1 package Red Lobster Cheddar Bay Biscuit Mix 11.36 oz
  • 2 cups whole milk
  • 1 can cream of chicken soup 10.5 oz
  • 2 cups chicken stock
  • 1 bag frozen mixed vegetables 12 oz
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions
 

  • Preheat the oven to 375°F (190°C). Place the melted butter in the bottom of a 9x13-inch baking dish.
  • Layer the shredded chicken evenly over the melted butter, followed by the frozen mixed vegetables. Do not stir.
  • In a mixing bowl, combine the biscuit mix, included seasoning packet, and milk. Stir until just combined, then pour over the chicken and vegetables. Do not stir.
  • In another bowl, whisk together the cream of chicken soup and chicken stock until smooth. Pour this mixture over the biscuit layer. Do not stir.
  • Bake uncovered for 45 minutes, or until the top is golden brown and the center is set. Let the cobbler rest for 10 minutes before serving. Garnish with chopped parsley if desired.

Notes

For added flavor, consider sprinkling shredded cheddar cheese over the vegetables before adding the biscuit layer. You can also customize the vegetable mix to your preference.
