A simple and flavorful slow cooker recipe featuring tender chicken breasts cooked with colorful bell peppers and onions. Perfect for an easy weeknight dinner or meal prep.
Ingredients
4 boneless, skinless chicken breasts
2 medium red bell peppers, sliced into thin strips
2 medium green bell peppers, sliced into thin strips
1 large yellow onion, sliced into thin strips
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chicken broth
1 tablespoon olive oil
Instructions
Place the sliced red bell peppers, green bell peppers, and yellow onion evenly in the bottom of the crock pot.
In a small bowl, combine the minced garlic, dried oregano, dried basil, smoked paprika, salt, and black pepper.
Rub the spice mixture evenly over both sides of each chicken breast.
Place the seasoned chicken breasts on top of the peppers and onions in the crock pot.
Pour the chicken broth and olive oil over the chicken and vegetables.
Cover the crock pot with the lid and cook on low for 4 hours, or until the chicken is cooked through and tender.
Once cooked, carefully remove the chicken breasts and slice or shred as desired.
Stir the peppers and onions to mix with the cooking juices and serve alongside the chicken.
