Description

4 chicken apple sausages, sliced into 1/2-inch pieces
2 medium red bell peppers, cut into 1-inch pieces
1 large red onion, cut into wedges
2 medium zucchinis, sliced into 1/2-inch rounds
2 medium apples, cored and cut into 1-inch pieces
3 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon garlic powder
Salt, to taste
Freshly ground black pepper, to taste


Instructions

Preheat the oven to 425°F (220°C).
Line a large sheet pan with parchment paper or lightly grease it with 1 tablespoon of olive oil.
In a large bowl, combine the sliced chicken apple sausages, red bell peppers, red onion wedges, zucchini slices, and apple pieces.
Drizzle the remaining 2 tablespoons of olive oil over the sausage and vegetables.
Sprinkle the dried thyme, dried rosemary, garlic powder, salt, and freshly ground black pepper over the mixture.
Toss everything together until all pieces are evenly coated with oil and seasonings.
Spread the sausage and vegetable mixture evenly on the prepared sheet pan in a single layer.
Place the sheet pan in the preheated oven and roast for 20 to 25 minutes, stirring halfway through, until the sausages are cooked through and the vegetables are tender and slightly caramelized.
Remove from the oven and let cool for 2 minutes before serving.
