A quick and easy sheet pan meal featuring tender gnocchi, flavorful chicken sausage, and roasted vegetables all baked together for a delicious and comforting dinner.
Ingredients
1 pound potato gnocchi
12 ounces chicken sausage, sliced into 1/2-inch pieces
1 medium red bell pepper, seeded and cut into 1-inch pieces
1 medium yellow bell pepper, seeded and cut into 1-inch pieces
1 medium zucchini, cut into 1/2-inch thick half-moons
1 medium red onion, cut into 1-inch wedges
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, combine the sliced chicken sausage, red bell pepper, yellow bell pepper, zucchini, and red onion.
Add the olive oil, garlic powder, dried Italian seasoning, salt, and black pepper to the bowl. Toss everything together until the sausage and vegetables are evenly coated.
Spread the sausage and vegetable mixture evenly on a large rimmed baking sheet.
Place the baking sheet in the preheated oven and roast for 15 minutes.
After 15 minutes, remove the baking sheet from the oven and add the potato gnocchi, spreading them evenly among the sausage and vegetables.
Return the baking sheet to the oven and roast for an additional 10 minutes, or until the gnocchi are golden and the sausage is cooked through.
Remove from the oven and sprinkle the grated Parmesan cheese and chopped fresh parsley over the top.
Serve warm directly from the sheet pan.
