Ingredients
1 pound raw shrimp, peeled and deveined
12 ounces turkey sausage, sliced into 1/2-inch pieces
1 medium red bell pepper, cut into 1-inch pieces
1 medium yellow bell pepper, cut into 1-inch pieces
1 medium zucchini, sliced into 1/2-inch rounds
1 medium red onion, cut into 1-inch pieces
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/2 teaspoon salt
1 tablespoon fresh parsley, chopped (for garnish)
1 teaspoon lemon juice
Instructions
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a large bowl, combine the shrimp, turkey sausage slices, red bell pepper, yellow bell pepper, zucchini, and red onion.
Drizzle the olive oil over the shrimp and vegetables, then sprinkle with smoked paprika, garlic powder, onion powder, black pepper, and salt.
Toss everything together until all ingredients are evenly coated with oil and seasonings.
Place the mixture into the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
Cook for 12 to 15 minutes, shaking the basket or stirring the ingredients halfway through cooking to ensure even browning.
Check that the shrimp are opaque and cooked through and the vegetables are tender-crisp.
Transfer the cooked shrimp, sausage, and veggies to a serving dish.
Drizzle with lemon juice and sprinkle with chopped fresh parsley before serving.
