6 cups fresh peaches, peeled and sliced
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 teaspoons cornstarch
1 cup rolled oats
1 cup all-purpose flour
1/2 cup light brown sugar, packed
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1 large egg
1 teaspoon vanilla extract


Instructions

Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, lemon juice, vanilla extract, ground cinnamon, ground nutmeg, and cornstarch. Stir gently to coat the peaches evenly. Set aside.
In a separate bowl, mix together the rolled oats, all-purpose flour, light brown sugar, baking soda, and salt.
Add the melted butter, egg, and vanilla extract to the dry ingredients. Stir until the mixture forms a crumbly dough.
Pour the peach mixture into a 9×13 inch baking dish, spreading it out evenly.
Crumble the oatmeal cookie topping evenly over the peaches.
Bake in the preheated oven for 40 to 45 minutes, or until the topping is golden brown and the peach filling is bubbling.
Remove from the oven and let cool for at least 15 minutes before serving.
