A hearty and flavorful zucchini and ground beef dinner that’s easy to prepare and perfect for a weeknight meal. This dish combines tender sautéed zucchini with seasoned ground beef for a satisfying and nutritious dinner.
Ingredients
1 pound ground beef
2 medium zucchinis, diced
1 medium onion, finely chopped
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1/2 cup tomato sauce
1/4 cup grated Parmesan cheese
Instructions
Heat olive oil in a large skillet over medium heat.
Add the chopped onion and sauté for 3-4 minutes until translucent.
Add the minced garlic and cook for 1 minute until fragrant.
Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 6-8 minutes.
Drain any excess fat from the skillet.
Add the diced zucchini to the skillet and stir to combine with the beef mixture.
Season with dried oregano, dried basil, salt, black pepper, and crushed red pepper flakes.
Cook for 6-8 minutes, stirring occasionally, until the zucchini is tender but not mushy.
Pour in the tomato sauce and stir well to combine.
Simmer for 2-3 minutes until heated through.
Remove the skillet from heat and sprinkle grated Parmesan cheese over the top.
Serve warm.
