A rich and flavorful one-pan dish featuring Italian sausage, sun-dried tomatoes, spinach, and a creamy garlic Parmesan sauce. Perfect for a comforting weeknight dinner.
Ingredients
1 pound Italian sausage, casings removed
1 tablespoon olive oil
3 cloves garlic, minced
1 cup sun-dried tomatoes, chopped
2 cups fresh baby spinach
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
Instructions
Heat olive oil in a large skillet over medium heat.
Add Italian sausage to the skillet, breaking it apart with a spoon, and cook until browned and cooked through, about 6-8 minutes.
Remove the cooked sausage from the skillet and set aside, leaving the rendered fat in the pan.
Add minced garlic to the skillet and sauté for 1 minute until fragrant.
Stir in chopped sun-dried tomatoes and cook for 2 minutes.
Pour in the heavy cream and chicken broth, stirring to combine.
Add grated Parmesan cheese, dried oregano, and crushed red pepper flakes. Stir until the cheese melts and the sauce thickens slightly, about 3-4 minutes.
Return the cooked sausage to the skillet and stir to coat with the sauce.
Add fresh baby spinach and cook until wilted, about 2 minutes.
Season with salt and black pepper to taste.
Serve hot, garnished with additional Parmesan if desired.
