Ingredients
1 pound raw shrimp, peeled and deveined
1 medium red bell pepper, cut into 1-inch pieces
1 medium zucchini, sliced into 1/2-inch rounds
1 cup broccoli florets
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
Instructions
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a large bowl, combine the shrimp, red bell pepper pieces, zucchini slices, and broccoli florets.
Add olive oil, minced garlic, smoked paprika, salt, and black pepper to the bowl. Toss everything together until the shrimp and vegetables are evenly coated with the seasoning.
Place the shrimp and vegetable mixture in the air fryer basket in a single layer. Cook for 8 minutes, shaking the basket halfway through cooking to ensure even crisping.
Remove the shrimp and vegetables from the air fryer and transfer them to a serving dish.
Drizzle fresh lemon juice over the shrimp and vegetables and sprinkle with chopped fresh parsley before serving.
