Ingredients
1 tablespoon olive oil
1 pound lean ground beef (at least 90% lean)
1 medium yellow onion, diced
3 cloves garlic, minced
1 medium green bell pepper, diced
1 medium red bell pepper, diced
1 (14.5 ounce) can diced tomatoes, undrained
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can black beans, drained and rinsed
1 (6 ounce) can tomato paste
1 cup low sodium beef broth
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 teaspoon black pepper
1/2 teaspoon salt
Instructions
Heat the olive oil in a large pot over medium-high heat.
Add the lean ground beef to the pot and cook, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes.
Add the diced onion, minced garlic, diced green bell pepper, and diced red bell pepper to the pot. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
Stir in the diced tomatoes with their juice, kidney beans, black beans, tomato paste, and beef broth.
Add chili powder, ground cumin, smoked paprika, dried oregano, black pepper, and salt. Stir well to combine all ingredients.
Bring the chili to a boil, then reduce the heat to low and simmer uncovered for 30 minutes, stirring occasionally to prevent sticking.
Taste and adjust seasoning if needed before serving.
