Ingredients
1 pound beef stew meat, cut into 1-inch cubes
1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
4 medium carrots, peeled and sliced into 1/2-inch pieces
3 medium potatoes, peeled and diced into 1-inch cubes
1 medium onion, chopped
3 cloves garlic, minced
2 cups beef broth
1 cup water
1 (14.5 ounce) can diced tomatoes, undrained
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons tomato paste
2 tablespoons olive oil
2 tablespoons all-purpose flour
Instructions
In a large skillet, heat olive oil over medium-high heat.
Add beef stew meat and brown on all sides, about 5 minutes. Remove beef and set aside.
In the same skillet, add chicken pieces and cook until lightly browned, about 4 minutes. Remove chicken and set aside.
In a small bowl, mix flour with a few tablespoons of beef broth to create a smooth slurry.
Place carrots, potatoes, and onion in the bottom of the crockpot.
Add browned beef and chicken on top of the vegetables.
Add minced garlic, diced tomatoes with their juice, tomato paste, dried thyme, dried rosemary, salt, and black pepper to the crockpot.
Pour remaining beef broth and water over all ingredients.
Stir in the flour slurry to help thicken the stew during cooking.
Cover crockpot and cook on low for 6 hours, or until beef and chicken are tender and vegetables are cooked through.
Stir the stew before serving and adjust seasoning with additional salt and pepper if needed.
