Description

1 pound ground beef
1 tablespoon olive oil
1 medium yellow onion, diced
1 medium red bell pepper, diced
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
1 (8 ounce) can tomato sauce
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh cilantro


Instructions

Heat olive oil in a large skillet over medium-high heat.
Add diced onion and red bell pepper to the skillet and sauté for 3-4 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Add ground beef to the skillet and cook, breaking it up with a spoon, until browned and no longer pink, about 6-8 minutes.
Drain any excess fat from the skillet.
Stir in diced tomatoes with their juice, tomato sauce, ground cumin, chili powder, smoked paprika, dried oregano, cayenne pepper, salt, and black pepper.
Reduce heat to medium-low and simmer uncovered for 10 minutes, stirring occasionally, until the mixture thickens slightly.
Remove from heat and stir in chopped fresh cilantro.
Serve hot with warm tortillas, rice, or your favorite Mexican side dishes.
