Ingredients
1 cup creamy peanut butter
1 cup granulated sugar
1 large egg
1 teaspoon baking soda
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large mixing bowl, combine the peanut butter and granulated sugar. Stir until smooth and creamy.
Add the egg, baking soda, vanilla extract, and salt to the peanut butter mixture. Mix until all ingredients are fully incorporated and a dough forms.
Using a tablespoon, scoop out dough and roll into balls. Place the dough balls on the prepared baking sheets about 2 inches apart.
Press each dough ball down gently with a fork, creating a crisscross pattern on top of each cookie.
Bake the cookies in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden but the centers remain soft.
Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
