Ingredients
1 tablespoon unsalted butter, melted
1 large egg
2 tablespoons mashed ripe banana (about 1/4 of a medium banana)
2 tablespoons almond flour
1 tablespoon coconut flour
1 tablespoon erythritol sweetener
1/4 teaspoon baking powder
1/4 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
2 tablespoons chopped walnuts
Instructions
In a microwave-safe mug, whisk together the melted butter and egg until well combined.
Add the mashed banana and vanilla extract to the mug and mix thoroughly.
Add almond flour, coconut flour, erythritol, baking powder, and ground cinnamon to the mug. Stir until the batter is smooth and evenly mixed.
Fold in the chopped walnuts gently.
Microwave the mug cake on high for 90 to 120 seconds, or until the cake has risen and is set in the middle. Cooking time may vary depending on your microwave wattage.
Carefully remove the mug from the microwave and let it cool for 1 to 2 minutes before eating.
