A creamy, flavorful one pot pasta dish inspired by peanut sauces, combining tender pasta with a rich peanut butter sauce, garlic, and fresh herbs for a quick and satisfying meal.
Ingredients
12 ounces dried spaghetti
4 cups vegetable broth
1 cup water
1/2 cup creamy peanut butter
2 tablespoons soy sauce
1 tablespoon lime juice
1 tablespoon brown sugar
3 cloves garlic, minced
1 teaspoon grated fresh ginger
1/2 teaspoon crushed red pepper flakes
1/4 cup chopped fresh cilantro
2 green onions, thinly sliced
1/4 cup chopped roasted peanuts
1 tablespoon sesame oil
Salt to taste
Instructions
In a large pot or deep skillet, combine the dried spaghetti, vegetable broth, water, minced garlic, grated ginger, soy sauce, lime juice, brown sugar, and crushed red pepper flakes.
Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent the pasta from sticking.
Reduce the heat to medium and simmer, stirring frequently, until the pasta is tender and most of the liquid has been absorbed, about 10 to 12 minutes.
Remove the pot from heat and stir in the creamy peanut butter and sesame oil until the sauce is smooth and well combined.
Taste and add salt if needed.
Stir in half of the chopped cilantro and green onions.
Serve the pasta garnished with the remaining cilantro, green onions, and chopped roasted peanuts.
