Air Fryer Potato Latke Muffins

Description

Crispy on the outside and tender on the inside, these Air Fryer Potato Latke Muffins are a fun twist on traditional latkes. Perfect for breakfast, brunch, or a snack, they are easy to make and cook quickly in the air fryer.

2 medium russet potatoes, peeled and grated
1 small yellow onion, grated
1 large egg
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon baking powder
2 tablespoons vegetable oil, divided


Instructions

Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
In a large bowl, combine the grated potatoes and grated onion.
Add the egg, all-purpose flour, salt, black pepper, garlic powder, and baking powder to the potato mixture. Stir until well combined.
Preheat the air fryer to 375°F (190°C) for 5 minutes.
Lightly grease a 6-cup silicone or metal muffin pan with 1 tablespoon of vegetable oil.
Divide the latke mixture evenly among the muffin cups, pressing down gently to form compact muffins.
Brush the tops of the latke muffins with the remaining 1 tablespoon of vegetable oil.
Place the muffin pan in the air fryer basket and cook at 375°F (190°C) for 12 to 15 minutes, or until the muffins are golden brown and crispy on top.
Carefully remove the muffin pan from the air fryer and let the latke muffins cool for 2 minutes before removing them from the pan.
Serve warm with sour cream or applesauce if desired.
