Ingredients

1 cup rolled oats
1 cup water
1 cup milk
1/4 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 large egg
1 tablespoon unsalted butter, melted
1/4 cup fresh lemon juice
1 tablespoon lemon zest
1/2 teaspoon vanilla extract


Instructions

In a medium saucepan, combine rolled oats, water, and milk. Bring to a gentle boil over medium heat, stirring occasionally.
Once boiling, reduce heat to low and simmer for 5 minutes, stirring frequently until oats are soft and creamy.
In a separate bowl, whisk together granulated sugar, baking powder, salt, egg, melted butter, lemon juice, lemon zest, and vanilla extract until well combined.
Remove the cooked oats from heat and stir the lemon mixture into the oats until fully incorporated.
Return the saucepan to low heat and cook for an additional 2-3 minutes, stirring constantly, until the mixture thickens slightly and resembles a lemon cake batter consistency.
Remove from heat and let the lemon cake oats cool slightly before serving.
Divide the lemon cake oats into two bowls and serve warm.
