A comforting and hearty turkey dinner casserole combining tender turkey, mixed vegetables, creamy sauce, and a crispy mashed potato topping. Perfect for using leftover turkey and making a satisfying family meal.
Ingredients
3 cups cooked turkey, shredded or chopped
2 cups frozen mixed vegetables (carrots, peas, corn, green beans), thawed
1 medium onion, finely chopped
2 cloves garlic, minced
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups low-sodium chicken broth
1 cup whole milk
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups mashed potatoes (prepared from about 2 pounds potatoes, peeled and boiled)
1/2 cup shredded sharp cheddar cheese
Instructions
Preheat the oven to 375°F (190°C).
In a large skillet over medium heat, melt the butter.
Add the chopped onion and cook for 4 to 5 minutes until softened.
Add the minced garlic and cook for 1 minute until fragrant.
Stir in the flour and cook for 1 to 2 minutes, stirring constantly, to form a roux.
Gradually whisk in the chicken broth and milk, continuing to whisk until the sauce thickens, about 3 to 5 minutes.
Add the dried thyme, salt, and black pepper to the sauce and stir to combine.
Remove the sauce from heat and stir in the cooked turkey and thawed mixed vegetables.
Transfer the turkey and vegetable mixture to a 9×13-inch baking dish, spreading it evenly.
Spread the prepared mashed potatoes evenly over the turkey mixture.
Sprinkle the shredded cheddar cheese evenly on top of the mashed potatoes.
Bake in the preheated oven for 35 to 40 minutes, or until the casserole is bubbly and the cheese is golden brown.
Remove from the oven and let cool for 5 minutes before serving.
