Crock Pot Beef Queso

Description

A creamy, cheesy, and flavorful crock pot beef queso perfect for parties, game days, or a comforting snack. Ground beef is cooked with spices and mixed with melted cheese in the slow cooker for an easy dip everyone will love.

1 pound ground beef
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (10 ounce) can diced tomatoes with green chilies, drained
1 (16 ounce) package processed cheese (Velveeta), cut into 1-inch cubes
1/2 cup milk
1/4 cup diced green onions, for garnish
Tortilla chips, for serving


Instructions

Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes.
Drain excess fat from the cooked beef and transfer the beef to the crock pot.
Add chili powder, ground cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper to the crock pot. Stir to combine evenly with the beef.
Add the drained diced tomatoes with green chilies to the crock pot and stir to combine.
Add the cubed processed cheese and milk to the crock pot. Stir gently to combine all ingredients.
Cover and cook on low for 2 to 3 hours, stirring every 30 minutes after the first hour, until the cheese is fully melted and the mixture is creamy and smooth.
Once ready, stir the queso dip well and garnish with diced green onions.
Serve warm with tortilla chips for dipping.
