A comforting and easy one-pot casserole combining tender chicken, broccoli, rice, and melted cheese for a delicious family-friendly meal.
Ingredients
1 tablespoon olive oil
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
1 medium yellow onion, diced
3 cloves garlic, minced
1 cup long grain white rice, uncooked
2 1/2 cups low sodium chicken broth
2 cups fresh broccoli florets, chopped into bite-sized pieces
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 teaspoon paprika
1 1/2 cups shredded sharp cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup sour cream
Instructions
Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.
Add the chicken pieces and cook until lightly browned on all sides, about 5 minutes. Remove chicken and set aside.
In the same skillet, add diced onion and cook until softened, about 3 minutes.
Add minced garlic and cook for 1 minute until fragrant.
Add uncooked rice to the skillet and stir to coat with oil and onion mixture.
Pour in chicken broth, then add salt, black pepper, dried thyme, and paprika. Stir to combine.
Return the browned chicken pieces to the skillet and bring the mixture to a boil.
Reduce heat to low, cover, and simmer for 15 minutes.
After 15 minutes, stir in chopped broccoli florets, cover again, and cook for an additional 10 minutes, or until rice is tender and broccoli is cooked but still bright green.
Remove skillet from heat. Stir in shredded cheddar cheese, shredded mozzarella cheese, and sour cream until cheese is melted and mixture is creamy.
Adjust seasoning with additional salt and pepper if needed.
