These make ahead chicken drumsticks are marinated overnight for maximum flavor and baked to crispy, juicy perfection. Perfect for meal prep or easy weeknight dinners.
Ingredients
8 chicken drumsticks, skin on
1/4 cup olive oil
3 tablespoons soy sauce
2 tablespoons honey
2 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon ground black pepper
1/2 teaspoon salt
Instructions
In a large bowl, whisk together olive oil, soy sauce, honey, minced garlic, smoked paprika, black pepper, and salt until well combined.
Add the chicken drumsticks to the marinade and toss to coat each piece evenly.
Cover the bowl with plastic wrap and refrigerate for at least 8 hours or overnight to marinate.
Preheat the oven to 400°F (200°C).
Line a baking sheet with aluminum foil and place a wire rack on top.
Arrange the marinated chicken drumsticks on the wire rack, spacing them evenly.
Bake in the preheated oven for 35 to 40 minutes, turning once halfway through, until the chicken is cooked through and the skin is crispy.
Remove from oven and let rest for 5 minutes before serving.
