One Pot Creamy Hummus Pasta

Ingredients

12 ounces penne pasta
4 cups water
1 cup plain hummus
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1/4 cup chopped fresh parsley


Instructions

In a large pot, combine the penne pasta, water, minced garlic, olive oil, salt, black pepper, and crushed red pepper flakes.
Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent the pasta from sticking.
Reduce heat to medium and continue to cook, stirring frequently, until the pasta is al dente and most of the water has been absorbed, about 10 to 12 minutes.
Remove the pot from heat and stir in the hummus and grated Parmesan cheese until the sauce is creamy and evenly coats the pasta.
Taste and adjust seasoning with additional salt or pepper if desired.
Sprinkle chopped fresh parsley over the pasta before serving.
