A flavorful and spicy jerk chicken freezer meal that’s perfect for meal prep. Marinated chicken thighs with classic jerk seasoning, paired with rice and vegetables, all ready to be frozen and cooked later for a quick and delicious dinner.
Ingredients
8 boneless skinless chicken thighs
1/4 cup soy sauce
2 tablespoons olive oil
2 tablespoons lime juice
2 tablespoons brown sugar
1 tablespoon fresh thyme leaves
1 tablespoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
2 cups cooked white rice
1 cup frozen mixed bell peppers
1 cup frozen green beans
Instructions
In a large mixing bowl, combine soy sauce, olive oil, lime juice, brown sugar, fresh thyme leaves, ground allspice, ground cinnamon, ground nutmeg, smoked paprika, garlic powder, onion powder, ground black pepper, cayenne pepper, and salt to create the jerk marinade.
Add the chicken thighs to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour or overnight for best flavor.
After marinating, place the chicken thighs in a single layer in a freezer-safe meal container or bag.
Add cooked white rice, frozen mixed bell peppers, and frozen green beans to the container, distributing evenly around the chicken.
Seal the container or bag tightly, label with the date, and freeze for up to 3 months.
To cook, thaw the freezer meal overnight in the refrigerator.
Preheat the oven to 375°F (190°C).
Transfer the contents of the container to a baking dish if needed.
Bake uncovered for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
Remove from oven and let rest for 5 minutes before serving.
