Ingredients
1.5 pounds Yukon Gold potatoes, washed and cut into 1-inch cubes
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
Preheat the oven to 425°F (220°C).
Place the cubed potatoes in a large mixing bowl.
Add the olive oil, garlic powder, dried rosemary, dried thyme, smoked paprika, salt, and black pepper to the bowl with the potatoes.
Toss the potatoes thoroughly to ensure they are evenly coated with the oil and seasonings.
Spread the seasoned potatoes in a single layer on a large rimmed sheet pan.
Place the sheet pan in the preheated oven and roast the potatoes for 35 to 40 minutes, stirring halfway through to promote even browning.
Remove the potatoes from the oven when they are golden brown and crispy on the outside and tender on the inside.
Sprinkle the chopped fresh parsley over the roasted potatoes and toss gently to combine.
Serve the sheet pan dinner potatoes hot as a side dish or a main course.
