Description

A hearty and comforting Jiffy Corn Casserole combined with savory ground beef, perfect for a family dinner or potluck. This easy-to-make casserole blends creamy corn, seasoned beef, and cheese for a delicious one-dish meal.

1 pound ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
1 (8.5 ounce) box Jiffy corn muffin mix
1 cup sour cream
1 cup shredded cheddar cheese
1 (15 ounce) can whole kernel corn, drained
1 (14.75 ounce) can cream-style corn
2 large eggs
1/2 cup milk


Instructions

Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
In a large skillet over medium heat, cook the ground beef, chopped onion, and minced garlic until the beef is browned and the onion is translucent, about 6-8 minutes. Drain excess fat.
Add salt, black pepper, and chili powder to the beef mixture. Stir well and cook for another 1-2 minutes. Remove from heat and set aside.
In a large mixing bowl, combine the Jiffy corn muffin mix, sour cream, shredded cheddar cheese, drained whole kernel corn, cream-style corn, eggs, and milk. Stir until all ingredients are well incorporated.
Fold the cooked ground beef mixture into the corn batter until evenly distributed.
Pour the mixture into the prepared baking dish and spread it out evenly.
Bake in the preheated oven for 40-45 minutes, or until the casserole is set and the top is golden brown.
Remove from the oven and let it cool for 5 minutes before serving.
