A quick and easy sheet pan dinner featuring cheese tortellini, fresh vegetables, and Italian sausage, all roasted together for a delicious and comforting meal.
Ingredients
1 pound cheese tortellini, fresh or refrigerated
12 ounces Italian sausage, casings removed
1 medium red bell pepper, sliced into 1/2-inch strips
1 medium zucchini, sliced into 1/2-inch rounds
1 cup cherry tomatoes, halved
1/2 medium red onion, sliced into thin wedges
3 tablespoons olive oil
1 teaspoon dried Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh basil
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, combine the Italian sausage and break it into small pieces with your hands or a spoon.
Add the red bell pepper, zucchini, cherry tomatoes, and red onion to the bowl with the sausage.
Add the olive oil, dried Italian seasoning, garlic powder, salt, and black pepper to the bowl. Toss everything together until the sausage and vegetables are evenly coated.
Spread the sausage and vegetable mixture evenly on a large rimmed sheet pan.
Place the sheet pan in the oven and roast for 15 minutes.
After 15 minutes, remove the sheet pan from the oven and add the cheese tortellini evenly over the sausage and vegetables. Toss gently to combine.
Return the sheet pan to the oven and roast for an additional 10 minutes, or until the sausage is cooked through, vegetables are tender, and tortellini are lightly browned.
Remove the sheet pan from the oven and sprinkle the grated Parmesan cheese and chopped fresh basil over the top.
Serve warm directly from the sheet pan.
