A comforting and hearty chicken pasta soup inspired by Johnna Allen’s dinner style. This soup features tender chicken, flavorful vegetables, and pasta in a savory broth, perfect for a cozy meal.
Ingredients
2 tablespoons olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
3 medium carrots, peeled and diced
2 celery stalks, diced
8 cups chicken broth
2 cups cooked chicken breast, shredded
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon black pepper
1/2 teaspoon salt
1 cup small pasta shells
1 cup fresh spinach, chopped
1/4 cup fresh parsley, chopped
Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion, minced garlic, carrots, and celery to the pot. Sauté for 5-7 minutes until vegetables are softened.
Pour in the chicken broth and bring to a boil.
Add shredded cooked chicken, dried thyme, dried oregano, black pepper, and salt to the pot. Stir to combine.
Reduce heat to medium-low and simmer for 10 minutes.
Add the pasta shells to the soup and cook for 8-10 minutes until pasta is tender.
Stir in chopped spinach and cook for an additional 2 minutes until spinach is wilted.
Remove the pot from heat and stir in fresh parsley.
Ladle soup into bowls and serve warm.
