High Protein Chicken Wild Rice Soup

Description

A hearty and nutritious high protein chicken wild rice soup packed with tender chicken breast, wholesome wild rice, and fresh vegetables, perfect for a comforting and filling meal.


Ingredients

2 tablespoons olive oil
1 medium yellow onion, diced
3 medium carrots, peeled and diced
3 celery stalks, diced
3 garlic cloves, minced
8 cups low sodium chicken broth
1 1/2 cups wild rice, rinsed
2 large chicken breasts, skinless and boneless, cut into 1-inch cubes
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon black pepper
1/2 teaspoon salt
1 cup chopped fresh spinach
1/2 cup plain Greek yogurt


Instructions

Heat olive oil in a large pot over medium heat.
Add diced onion, carrots, and celery to the pot and sauté for 5-7 minutes until vegetables are softened.
Add minced garlic and cook for an additional 1 minute until fragrant.
Pour in the chicken broth and bring to a boil.
Add the rinsed wild rice to the boiling broth, reduce heat to low, cover, and simmer for 30 minutes.
After 30 minutes, add the cubed chicken breasts, dried thyme, dried rosemary, black pepper, and salt to the pot.
Simmer uncovered for 15 minutes or until the chicken is cooked through and the wild rice is tender.
Stir in the chopped fresh spinach and cook for 2 more minutes until wilted.
Remove the pot from heat and stir in the plain Greek yogurt until fully incorporated.
Serve hot and enjoy your high protein chicken wild rice soup.
