A moist and flavorful layered apple cake packed with protein, perfect for a healthy dessert or snack. Layers of spiced apple and protein-enriched batter come together to create a delicious treat.
Ingredients
2 medium apples, peeled, cored, and thinly sliced
1 tablespoon lemon juice
1 cup oat flour
1/2 cup vanilla protein powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 large eggs
1/2 cup plain Greek yogurt
1/4 cup honey
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
2 tablespoons coconut oil, melted
Instructions
Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a medium bowl, toss the sliced apples with lemon juice and set aside.
In a large bowl, whisk together oat flour, vanilla protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a separate bowl, beat the eggs. Add Greek yogurt, honey, applesauce, vanilla extract, and melted coconut oil. Mix until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Spread a thin layer of batter evenly on the bottom of the prepared cake pan.
Arrange a layer of apple slices over the batter.
Pour another layer of batter over the apples, spreading gently to cover them.
Add another layer of apple slices on top of the batter.
Pour the remaining batter over the apples and spread evenly.
Arrange the final layer of apple slices on top.
Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
