Description

Delicious and healthy vegan stuffed mushrooms filled with tofu and spices.


Ingredients

Scale
  • 12 large mushrooms
  • 1 block of firm tofu, crumbled
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon olive oil
  • 1 teaspoon nutritional yeast
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the mushrooms and remove the stems.
  3. In a pan, heat olive oil and sauté garlic until fragrant.
  4. Add crumbled tofu and spinach, cooking until spinach wilts.
  5. Stir in soy sauce, nutritional yeast, salt, and pepper.
  6. Stuff the mushroom caps with the tofu mixture.
  7. Place stuffed mushrooms on a baking sheet and bake for 20 minutes.
  8. Serve warm and enjoy!

Notes

  • Feel free to add other vegetables to the stuffing.
  • These can be made ahead of time and baked just before serving.
