Description
Delicious and healthy vegan stuffed mushrooms filled with tofu and spices.
Ingredients
Scale
- 12 large mushrooms
- 1 block of firm tofu, crumbled
- 1 cup spinach, chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon olive oil
- 1 teaspoon nutritional yeast
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Clean the mushrooms and remove the stems.
- In a pan, heat olive oil and sauté garlic until fragrant.
- Add crumbled tofu and spinach, cooking until spinach wilts.
- Stir in soy sauce, nutritional yeast, salt, and pepper.
- Stuff the mushroom caps with the tofu mixture.
- Place stuffed mushrooms on a baking sheet and bake for 20 minutes.
- Serve warm and enjoy!
Notes
- Feel free to add other vegetables to the stuffing.
- These can be made ahead of time and baked just before serving.
- Great as an appetizer or a side dish.
