Ingredients

- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 cup kidney beans, drained and rinsed
- 1 cup chickpeas, drained and rinsed
- 1/2 cup red onion, finely chopped
- 1/2 cup bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large pot, bring water to a boil and blanch the green beans for 2-3 minutes until bright green.
- Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process.
- In a large mixing bowl, combine the kidney beans, chickpeas, red onion, bell pepper, and parsley.
- Add the blanched green beans to the mixing bowl.
- In a small bowl, whisk together the olive oil, apple cider vinegar, garlic powder, salt, and pepper.
- Pour the dressing over the bean mixture and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
- Feel free to add other vegetables like corn or cucumber for extra crunch.
- This salad can be made a day in advance and stored in the refrigerator.
