Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh or frozen cranberries
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- Add the softened butter and mix until crumbly.
- Press half of the mixture into the bottom of a greased baking pan.
- In another bowl, mix cranberries, lemon juice, and vanilla extract.
- Spread the cranberry mixture over the crust in the pan.
- Sprinkle the remaining crumb mixture on top of the cranberries.
- Bake for 30-35 minutes or until golden brown.
- Allow to cool before cutting into bars.
Notes
- For a sweeter taste, add more sugar to the cranberry mixture.
- These bars can be stored in an airtight container for up to a week.
- Serve with whipped cream or ice cream for an extra treat.
