- 2 medium sweet potatoes, peeled and diced
- 1 bunch green asparagus, trimmed and cut into 2-inch pieces
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- In the last 10 minutes of roasting, add the asparagus to the baking sheet.
- Once cooked, remove from the oven and let cool slightly.
- In a large bowl, combine the roasted sweet potatoes and asparagus.
- Drizzle with lemon juice and the remaining olive oil, then toss gently to combine.
- Garnish with chopped parsley before serving.

- For added flavor, consider adding feta cheese or nuts.
