Description

A refreshing and nutritious salad featuring sweet potatoes and green asparagus, perfect for a light meal or side dish.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 bunch green asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In the last 10 minutes of roasting, add the asparagus to the baking sheet.
  5. Once cooked, remove from the oven and let cool slightly.
  6. In a large bowl, combine the roasted sweet potatoes and asparagus.
  7. Drizzle with lemon juice and the remaining olive oil, then toss gently to combine.
  8. Garnish with chopped parsley before serving.
