Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large bowl, combine cooked rice, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  4. Stuff each bell pepper with the rice mixture.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 30 minutes, then remove the foil and sprinkle cheese on top.
  7. Bake for an additional 10 minutes or until the cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.
