Description
A simple and flavorful slow cooker chicken recipe that is fully compliant with the Whole30 program. Perfectly tender and juicy chicken cooked with fresh herbs and spices, making a wholesome and satisfying meal.
Ingredients
1 whole chicken (about 4 pounds), giblets removed
1 tablespoon olive oil
1 teaspoon sea salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 lemon, quartered
4 cloves garlic, peeled and smashed
1 medium yellow onion, sliced
1 cup chicken broth (Whole30 compliant, no sugar added)
Instructions
Rinse the whole chicken under cold water and pat dry with paper towels.
Rub the olive oil all over the chicken, including under the skin where possible.
In a small bowl, mix together sea salt, black pepper, smoked paprika, garlic powder, onion powder, dried thyme, and dried rosemary.
Rub the spice mixture evenly over the entire chicken, including inside the cavity.
Stuff the cavity of the chicken with the quartered lemon and smashed garlic cloves.
Place the sliced onion in the bottom of the slow cooker.
Set the chicken on top of the onions in the slow cooker.
Pour the chicken broth around the chicken in the slow cooker, being careful not to wash off the seasoning.
Cover and cook on low for 4 to 4.5 hours, or until the internal temperature reaches 165°F (74°C) and the juices run clear when pierced.
Once cooked, carefully remove the chicken from the slow cooker and let it rest for 10 minutes before carving.
Serve the chicken with the cooked onions and pan juices spooned over the top.
