Ingredients
1 pound ground beef
1 medium onion, diced
3 cloves garlic, minced
1 medium head green cabbage, chopped (about 6 cups)
3 large carrots, peeled and sliced
3 stalks celery, sliced
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
4 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
1 teaspoon salt
2 tablespoons olive oil
Instructions
Heat olive oil in a large skillet over medium heat.
Add ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.
Add diced onion and minced garlic to the skillet and cook until onion is translucent, about 3 minutes.
Transfer the cooked beef, onion, and garlic mixture to the slow cooker.
Add chopped cabbage, sliced carrots, and sliced celery to the slow cooker.
Pour in diced tomatoes with their juice, tomato sauce, and beef broth.
Add Worcestershire sauce, dried thyme, dried oregano, smoked paprika, black pepper, and salt to the slow cooker.
Stir all ingredients together until well combined.
Cover and cook on low for 6 hours, or until vegetables are tender.
Stir the soup before serving and adjust seasoning with salt and pepper if needed.
