A hearty and comforting slow cooker chicken soup that’s perfect for a keto diet. Packed with tender chicken, low-carb vegetables, and flavorful herbs, this soup is easy to prepare and perfect for meal prep.
Ingredients
1.5 pounds boneless skinless chicken thighs
4 cups chicken broth (low sodium)
1 cup celery, chopped
1 cup cauliflower florets
1 cup zucchini, diced
1/2 cup onion, diced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon ground black pepper
1/2 teaspoon salt
2 tablespoons olive oil
1/4 cup fresh parsley, chopped
Instructions
Heat olive oil in a skillet over medium heat.
Add diced onion and minced garlic to the skillet and sauté for 3-4 minutes until softened and fragrant.
Place the chicken thighs in the slow cooker.
Add the sautéed onion and garlic on top of the chicken.
Add chopped celery, cauliflower florets, and diced zucchini to the slow cooker.
Pour the chicken broth over all the ingredients in the slow cooker.
Sprinkle dried thyme, dried rosemary, salt, and black pepper evenly over the ingredients.
Cover and cook on low for 6 hours, or until the chicken is tender and cooked through.
Remove the chicken thighs from the slow cooker and shred them using two forks.
Return the shredded chicken to the slow cooker and stir to combine.
Stir in the chopped fresh parsley just before serving.
Ladle the soup into bowls and serve hot.
