Ingredients

  • 4 chicken thighs
  • 1 cup honey
  • 1/2 cup soy sauce
  • 4 cloves garlic, minced
  • 4 medium carrots, sliced
  • 4 medium potatoes, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix honey, soy sauce, and minced garlic.
  2. Place chicken thighs in the slow cooker and season with salt and pepper.
  3. Add sliced carrots and diced potatoes on top of the chicken.
  4. Pour the honey garlic mixture over the chicken and vegetables.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken and mix everything together before serving.

  • For a thicker sauce, remove the chicken and vegetables and simmer the sauce on the stove until reduced.
