Ingredients

  • 1 lb chicken breast
  • 1 cup orzo pasta
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup spinach
  • 1/2 cup sun-dried tomatoes
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breast in the slow cooker.
  2. Add the chicken broth, garlic, Italian seasoning, salt, and pepper.
  3. Cook on low for 6 hours or high for 3 hours.
  4. Remove the chicken and shred it, then return it to the slow cooker.
  5. Add the orzo, heavy cream, spinach, sun-dried tomatoes, and Parmesan cheese.
  6. Stir well and cook for an additional 30 minutes on high until the orzo is tender.
