Ingredients

  • 4 chicken thighs
  • 1 cup fresh cranberries
  • 2 apples, sliced
  • 1/2 cup onion, chopped
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 teaspoon cinnamon
  • Salt and pepper to taste

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. Add the cranberries, sliced apples, and chopped onion on top of the chicken.
  3. In a small bowl, mix together the brown sugar, apple cider vinegar, cinnamon, salt, and pepper.
  4. Pour the mixture over the chicken and fruit.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
  6. Serve warm, spooning the cranberry-apple mixture over the chicken.

  • For a thicker sauce, remove the lid during the last hour of cooking.
