A hearty and healthy slow cooker chicken quinoa soup packed with tender chicken, nutritious quinoa, and fresh vegetables, perfect for a comforting meal any day.
Ingredients
1 pound boneless skinless chicken breasts
1 cup quinoa, rinsed
1 medium onion, diced
3 medium carrots, peeled and diced
2 celery stalks, diced
3 cloves garlic, minced
6 cups low sodium chicken broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/2 teaspoon salt
2 cups fresh spinach, chopped
1 tablespoon olive oil
1 tablespoon lemon juice
Instructions
Place the chicken breasts in the bottom of the slow cooker.
Add the diced onion, carrots, celery, and minced garlic on top of the chicken.
Rinse the quinoa thoroughly under cold water and add it to the slow cooker.
Pour in the chicken broth and stir in the dried thyme, dried oregano, black pepper, and salt.
Cover the slow cooker and cook on low for 6 hours, until the chicken is cooked through and vegetables are tender.
Remove the chicken breasts from the slow cooker and shred them using two forks.
Return the shredded chicken to the slow cooker and stir in the chopped spinach, olive oil, and lemon juice.
Cover and cook on low for an additional 10 minutes until the spinach is wilted.
Taste and adjust seasoning with additional salt and pepper if needed.
Ladle the soup into bowls and serve warm.
