Description

A simple and hearty slow cooker chicken dinner featuring tender chicken thighs, carrots, potatoes, and onions cooked to perfection in a savory broth.


Ingredients

4 bone-in, skin-on chicken thighs
4 medium carrots, peeled and cut into 2-inch pieces
4 medium red potatoes, quartered
1 large yellow onion, cut into wedges
3 cloves garlic, minced
1 cup low-sodium chicken broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil


Instructions

Heat olive oil in a large skillet over medium-high heat.
Season chicken thighs with salt and black pepper on both sides.
Place chicken thighs skin-side down in the skillet and sear for 3-4 minutes until golden brown. Flip and sear the other side for 2 minutes.
Remove chicken from skillet and set aside.
Add carrots, potatoes, onion, and garlic to the bottom of the slow cooker.
Sprinkle dried thyme and dried rosemary evenly over the vegetables.
Pour chicken broth over the vegetables.
Place the seared chicken thighs on top of the vegetables in the slow cooker, skin-side up.
Cover and cook on low for 6 hours or until the chicken is cooked through and vegetables are tender.
Remove chicken and vegetables from the slow cooker and serve warm.
