Description

A quick and healthy shrimp and vegetable dish cooked to perfection in the air fryer. This recipe combines tender shrimp with crisp, flavorful vegetables for a delicious meal ready in under 30 minutes.

12 ounces raw shrimp, peeled and deveined
1 medium red bell pepper, cut into 1-inch pieces
1 medium zucchini, sliced into 1/2-inch rounds
1 medium yellow squash, sliced into 1/2-inch rounds
1/2 medium red onion, cut into 1-inch pieces
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes


Instructions

Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a large bowl, combine the shrimp, red bell pepper, zucchini, yellow squash, and red onion.
Add olive oil, minced garlic, smoked paprika, salt, black pepper, and crushed red pepper flakes to the bowl. Toss everything together until the shrimp and vegetables are evenly coated.
Place the shrimp and vegetable mixture in the air fryer basket in a single layer. You may need to cook in batches to avoid overcrowding.
Cook for 10 to 12 minutes, shaking the basket halfway through cooking to ensure even crisping and cooking of the shrimp and vegetables.
Check that the shrimp are opaque and cooked through and the vegetables are tender and slightly crisp.
Remove from the air fryer and serve immediately.
