- 1 cup grits
- 4 cups water
- 1 pound shrimp, peeled and deveined
- 4 slices bacon, chopped
- 1 cup cheddar cheese, shredded
- 2 tablespoons butter
- 1 teaspoon garlic, minced
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a pot, bring 4 cups of water to a boil and add the grits. Reduce heat and simmer until thickened, about 20 minutes.
- While the grits are cooking, in a skillet, cook the chopped bacon until crispy. Remove and set aside, leaving the drippings in the skillet.
- Add the shrimp to the skillet and cook until pink, about 3-4 minutes. Add garlic, paprika, salt, and pepper, and cook for an additional minute.
- Stir in the butter and cooked bacon into the shrimp mixture.
- Once the grits are done, stir in the cheddar cheese until melted and creamy.
- Serve the shrimp mixture over the cheesy grits and garnish with chopped green onions.
Notes
- For a spicier version, add cayenne pepper to the shrimp mixture.
- Use low-sodium broth instead of water for more flavor in the grits.
- Leftovers can be stored in the refrigerator for up to 2 days.
