Classic buttery shortbread cookies cut into festive shapes, perfect for any occasion. These cookies are crisp, tender, and melt in your mouth.
Ingredients
1 cup unsalted butter, softened
3/4 cup granulated sugar
2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla extract
Instructions
Preheat the oven to 325°F (163°C). Line two baking sheets with parchment paper.
In a large mixing bowl, cream the softened unsalted butter and granulated sugar together until light and fluffy, about 3-4 minutes.
Add the vanilla extract and mix until combined.
In a separate bowl, whisk together the all-purpose flour and salt.
Gradually add the flour mixture to the butter mixture, mixing on low speed until a soft dough forms.
Turn the dough out onto a lightly floured surface and knead gently just until smooth.
Roll the dough out to about 1/4 inch thickness.
Use cookie cutters to cut out desired shapes and place them on the prepared baking sheets about 1 inch apart.
Bake in the preheated oven for 18-20 minutes, or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
