A quick and easy sheet pan meal featuring spicy sausage, succulent shrimp, and colorful vegetables, all roasted together for a flavorful and satisfying dinner.
Ingredients
12 ounces smoked sausage, sliced into 1/2-inch pieces
1 pound large shrimp, peeled and deveined
1 red bell pepper, seeded and cut into 1-inch pieces
1 yellow bell pepper, seeded and cut into 1-inch pieces
1 medium red onion, peeled and cut into 1-inch pieces
2 cups broccoli florets
3 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
2 tablespoons fresh parsley, chopped (for garnish)
1 lemon, cut into wedges (for serving)
Instructions
Preheat the oven to 400°F (200°C).
Line a large sheet pan with parchment paper or aluminum foil for easy cleanup.
In a large bowl, combine the sliced smoked sausage, shrimp, red bell pepper, yellow bell pepper, red onion, and broccoli florets.
Drizzle the olive oil over the sausage, shrimp, and vegetables.
Sprinkle the smoked paprika, garlic powder, onion powder, crushed red pepper flakes, salt, and black pepper evenly over the mixture.
Toss everything together until all ingredients are evenly coated with oil and seasonings.
Spread the mixture out in an even layer on the prepared sheet pan.
Place the sheet pan in the preheated oven and roast for 15 to 20 minutes, stirring halfway through, until the shrimp are pink and opaque and the vegetables are tender-crisp.
Remove the sheet pan from the oven.
Garnish with chopped fresh parsley and serve with lemon wedges on the side.
