A simple and flavorful one-pan meal featuring sausage, crispy roasted potatoes, sweet bell peppers, and caramelized onions. Perfect for an easy weeknight dinner with minimal cleanup.
Ingredients
1 pound Italian sausage links, cut into 1-inch pieces
1 pound baby potatoes, halved
2 medium bell peppers, sliced into 1/2-inch strips
1 large yellow onion, sliced into 1/2-inch strips
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, combine the halved baby potatoes, sliced bell peppers, and sliced onion.
Add 2 tablespoons of olive oil, garlic powder, smoked paprika, dried oregano, salt, and black pepper to the vegetables. Toss well to coat evenly.
Place the seasoned vegetables in a single layer on a large sheet pan.
Drizzle the remaining 1 tablespoon of olive oil over the sausage pieces and toss to coat.
Arrange the sausage pieces evenly on the sheet pan with the vegetables.
Place the sheet pan in the preheated oven and roast for 30 to 35 minutes, stirring halfway through, until the potatoes are tender and golden and the sausage is cooked through.
Remove from the oven and let cool for 5 minutes before serving.
