Pineapple Glazed Salmon

Description

Salmon fillet pan-seared to a crispy golden brown, then oven-baked with a luscious pineapple glaze that combines pineapple juice, brown sugar, soy sauce, garlic, and ginger for a tender and flavorful finish.


Ingredients

Salmon fillet (6 oz)
Pineapple juice (1/2 cup)
Brown sugar (2 tbsp)
Soy sauce (1 tbsp)
Garlic (1 clove, minced)
Fresh ginger (1 tsp, grated)
Olive oil (1 tbsp)
Salt (to taste)
Black pepper (to taste)


Instructions

Preheat oven to 400°F (200°C).
In a small saucepan, combine pineapple juice, brown sugar, soy sauce, minced garlic, and grated ginger. Simmer over medium heat until the mixture reduces and thickens slightly, about 6-8 minutes. Set aside the pineapple glaze.
Pat the salmon fillet dry and season both sides with salt and black pepper.
Heat olive oil in an oven-safe skillet over medium-high heat.
Place salmon fillet skin-side down and sear for 3-4 minutes until the exterior is crispy and golden brown.
Flip the salmon and brush the top generously with the pineapple glaze.
Transfer the skillet to the oven and bake for 8-10 minutes, until the salmon is cooked through and flakes easily with a fork.
Remove from oven, drizzle with remaining pineapple glaze, and let rest for 2 minutes before plating.
Plate the salmon fillet centered on a white round plate, drizzle pineapple glaze evenly over the top, and garnish with thin pineapple slices and chopped fresh cilantro on the side.
