8 lamb chops
Salt and pepper to taste
2 tablespoons olive oil
1 cup fresh mint leaves, chopped
2 tablespoons sugar
1/4 cup white vinegar
1/4 cup boiling water
Instructions
Season the lamb chops with salt and pepper.
Heat olive oil in a skillet over medium-high heat.
Cook lamb chops for 3-4 minutes per side until desired doneness.
For the mint sauce, combine sugar and boiling water until sugar dissolves.
Add vinegar and chopped mint leaves, stir and let cool.
Serve lamb chops hot with mint sauce drizzled on top or on the side.
