Description

A vibrant and flavorful dish combining smoky grilled corn with seasoned shrimp, topped with a creamy, tangy sauce and a sprinkle of cheese.


Ingredients

4 ears of corn, husked
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
1 teaspoon chili powder
Salt and pepper, to taste
1/2 cup mayonnaise
1/4 cup sour cream
1/2 cup crumbled cotija cheese
1 lime, juiced
1/4 cup fresh cilantro, chopped
1 clove garlic, minced


Instructions

Preheat grill to medium-high heat.
Brush corn and shrimp with olive oil; season shrimp with chili powder, salt, and pepper.
Grill corn for about 10 minutes, turning occasionally, until charred in spots.
Grill shrimp for 2-3 minutes per side until opaque and cooked through.
In a small bowl, mix mayonnaise, sour cream, lime juice, garlic, and a pinch of chili powder.
Brush the sauce generously over grilled corn.
Top corn with grilled shrimp, sprinkle with cotija cheese and chopped cilantro.
Serve immediately with extra lime wedges.
